Except for that which naturally occurs in Celery Salt

Sausage: 1-lb Rope:

  • How its made: Ground Pork is mixed with Seasoning, then stuffed:

    • Griller Links: Stuffed in Large 32 mm Beef Collagen, and cut into sandwich sized links.​ 6 links to a Vacuum Sealed Bag.

    • 1 lb bulk bags (loose sausage)

    • Breakfast Links: Stuffed into 26 mm Beef Collagen casings, and cut into single links.​ Packed in 1 lb Vacuum Bags.​​​

Sausage- 1 lb bag: 

  • How its made: Ground Pork and Seasoning are mixed, then stuffed into 1 lb plastic bulk bags, no casing.

  • Same Flavors as Griller Links​

Sausage- Breakfast Links: 

  • How its made: Ground Pork and Seasoning are mixed, then stuffed into 21mm Beef Collagen casings, partially frozen and then cut into single links.​ Packed in 1 lb Vacuum Bags.

  • ​ Same Flavors as Griller Links, though we most commonly use Breakfast Sage, Maple, or Old Fashioned for the smaller breakfast links.

No-Nitrite Ham: (except what naturally occurs in celery salt, and sea salt)

  • ​How its made: Hindquarters of pork are placed in cotton stockinette's, injected with our No-Nitrite cure solution, and brined for 6-7 days before being smoked. Partially Cooked.

  • Ingredients: Pork, Sea Salt, Raw Cane Sugar, Natural Hickory Smoked Salt Flavor, Natural Hickory Smoke Flavor, Beetroot Red (color), Molasses Powder (molasses, maltodextrin), Canola Oil, Ascorbic Acid (preservative), Tart Cherry Powder (cherry powder (natural flavor), organic cane sugar, and silicon dioxide (anti caking)), dried onion, Natural Flavors.

No-Nitrite Bacon: 

  • ​How its made: Pork Bellies are rubbed with No-Nitrite Seasoning, and allowed to cured in the cooler for 14 days before being smoked. Partially Cooked.

  • Ingredients: Pork, Sea Salt, Celery Salt, Brown Sugar, Black Pepper, and Garlic Powder.

Pork Roll: Touch of Dutch- Natural Pork Roll Seasoning

  • How its made: Seasoning is mixed with ground meat, stuffed into 8 lb approx fibrous casings (inedible), hung in the smokehouse and slowly brought up 160 degrees over 4-5 hours. Fully Cooked. 

  • Ingredients: Pork, Raw Cane Sugar, Sea Salt, Dairy Blend (whey solids, non-fat dry milk, buttermilk powder), non-GMO molasses powder (molasses, maltodextrin), fructose, natural hickory smoked salt (maltodextrin, salt, yeast extract,sunflower oil, natural flavors, silicon dioxide(anti-caking)), beet root red (color), non-GMO expeller pressed canola oil, black pepper, ground mustard seed, ascorbic acid (vitamin C), spice extractives, citric acid, paprika extract. 

Ring Bologna: 

  • ​How its made: Seasoning is mixed with ground meat, stuffed into 1 lb approx collagen casings (inedible), hung in the smokehouse and slowly brought up 160 degrees over 4 hours. Fully Cooked. 

  • Ingredients: Pork, Sea Salt, Raw Cane Sugar, Dairy Blend (whey solids, non-fat dry milk, buttermilk powder), Dried Onion, Natural Hickory Smoked Salt Flavor, Non-GMO Expeller Pressed Canola Oil, Beet Root Red (color), Dried Garlic, Lactic Acid Powder, Non-GMO Soy Sauce Powder, (fermented soy sauce [contains soybean and wheat], maltodextrin, salt), Ascorbic Acid (preservative), Coriander, Black Pepper, White Pepper, Mustard Seed, Dried Celery, Red Pepper, Natural Flavors, Nutmeg, Paprika Extract (color).

 

Ham Loaf: Touch of Dutch

  • How its made: Seasoning is mixed with ground pork, stuffed into 2.5 lb aluminum pans, placed in the smokehouse and slowly brought up 160 degrees over 4-5 hours. Fully Cooked. 

  • Ingredients: Pork, Milk, Eggs, Bread Crumbs, Raw Cane Sugar, Sea Salt, Dairy Blend (whey solids, non-fat dry milk, buttermilk powder), non-GMO molasses powder (molasses, maltodextrin), fructose, natural hickory smoked salt (maltodextrin, salt, yeast extract,sunflower oil, natural flavors, silicon dioxide(anti-caking)), beet root red (color), non-GMO expeller pressed canola oil, black pepper, ground mustard seed, ascorbic acid (vitamin C), spice extractives, citric acid, paprika extract. 

 

Lard: ​

  • ​How its made: Pork fat is coarse ground and slowly cooked to render into liquid, which is strained and poured into 2 pint freezer containers for storage. Excellent for cooking and frying.

  • Ingredients: Rendered Pork fat only.
