Beef Products

  • Sweet Bologna:  All Natural Lancaster Co. Sweet Bologna Seasoning

    • How its made: Sweet Bologna seasoning is mixed with ground meat, stuffed into 8 lb approx fibrous casings, hung in the smokehouse and slowly brought up 160 degrees over 5 hours. Fully Cooked.

    • Ingredients: Raw Cane Sugar, Sea Salt, Hickory Smoke Salt (sea salt, Non-GMO maltodextrin, hickory smoke flavor(maltodextrin, smoke flavor, sunflower oil, silicon dioxide, (anti-caking), Non-GMO expeller pressed canola oil, silicon dioxide)), Non-GMO Molasses Powder (molasses, maltodextrin), Black Pepper, Beet Extractive, Tart Cherry Powder (cherry powder (natural flavor), organic cane sugar (evaporated cane juice), and silicon dioxide), Non-GMO expeller pressed canola oil, Ascorbic Acid (Vitamin C), Spice Extractives.

  • Dried Beef: Our Own Recipe

    • How its made: Fresh beef roasts are dry rubbed with seasoning mix and refrigerated for a minimum of ten days. Beef is then smoked and slowly brought up 160 degrees over 5 hours, then refrigerated for several more days before being vacuum sealed or sliced at the customers request. Fully Cooked.

    • Ingredients: Sea Salt, Brown Sugar, Black Pepper, Celery Salt, and Garlic Powder.​​

  • Roast Beef (Sliced Lunchmeat): A Touch of Dutch

    • How its made: Fresh beef roasts are brined in seasoning solution for  7 days, then smoked and slowly brought up 160 degrees over 5 hours. Vacuum sealed or sliced at the customers request. Fully Cooked.

    • Ingredients:  Sea Salt, Raw Cane Sugar, Natural Hickory Smoked Salt Flavor, Natural Hickory Smoke Flavor, Beetroot Red (color), Molasses Powder (molasses, maltodextrin), Canola Oil, Ascorbic Acid (preservative), Tart Cherry Powder (cherry powder (natural flavor), organic cane sugar, and silicon dioxide (anti caking)), dried onion, Natural Flavors.

  • Snack sticks:

    • How its made: Ground beef is mixed with seasoning, stuffed into 21mm beef collagen casings, then smoked and slowly brought up 160 degrees over 5 hours. Fully Cooked.

    • Flavors:

      • BBQ (Our most popular flavor, A big hit with children): Ingredients: Sugar, Salt, Spices (Including Ground Mustard), Dextrose, Onion and Garlic Powder, Natural Smoke Flavor (Contains Maltodextrin), Molasses Powder (Cane Sugar, Cane Molasses, Cane Caramel Color), Natural Spice Extractives (Including Celery).​​

      • Mild (Some Red Pepper Kick): Ingredients: Salt, Corn Syrup Solids, Spices, Dehydrated Garlic.

      • Lebanon Ingredients (Salty/Savory): Salt, Sugar, Pepper, Spices, Dextrose, Onion and Garlic Powder, Natural Spice Extractives.

      • Sweet Chili Ingredients (Management's Favorite): Sugar, Salt, Spices (Including Chili Pepper and Cumin), Dehydrated Vegetables (Tomato, Onion, and Bell Pepper), Paprika, Sodium Erythorbate (0.41%)​​

      • Black Pepper (For those who put Black Pepper on everything): Ingredients: Brown Sugar, Pink Himalayan Sea Salt, Black Pepper, Celery Salt

  • Snack sticks with Cheese:

    • How its made: Ground beef is mixed with seasoning and High-temp cheddar cheese, stuffed into 21mm beef collagen casings, then smoked and slowly brought up 160 degrees over 5 hours. Fully Cooked.

    • Ingredients (Flavors same as above): Pasteurized processed cheddar cheese (cheddar cheese [cultured milk, salt, enzymes], water, cream, sodium phosphate, salt, annatto color, sorbic acid), powdered cellulose (to prevent caking). Allergen: Milk

  • Jerky: 

    • How its made: Fresh beef roast slices are tossed with seasoning mix and refrigerated for 24 hrs. Jerky is then smoked and slowly brought up 160 degrees. Fully Cooked.

      • Original Jerky Ingredients: Sea Salt, Evaporated Cane Sugar,  Black Pepper, Raw Cane Sugar, Pure Maple Sugar, Garlic Powder, Onion Powder, Non-GMO Expeller Pressed Canola Oil, Non-GMO Molasses Powder, molasses, maltodextrin), Cumin, Ground Celery Seed, Beet Extractive, Spice Extractives, Natural Lemon Juice Flavor, Ascorbic Acid (vitamin C)

      • Sweet Teriyaki Ingredients: Sugar, Fructose, Salt, Spices, Dehydrated Soy Sauce (Soy Sauce [Wheat, Soybeans, Salt], Maltodextrin, Salt), Hydrolyzed Soy Protein (Contains Salt, Caramel Color), Garlic Powder. Contains: Soy, Wheat Store in freezer to help prevent caking.

  • Ring Bologna: A Touch of Dutch

    • How its made: Ground beef is mixed with seasoning, stuffed into Non-Edible 40 mm x 18 in Collagen Casings that give a 1 lb ring. Bologna's are then smoked and slowly brought up 160 degrees over 5 hours. Fully Cooked.

    • Ingredients: WITH CHEESE: Pasteurized processed cheddar cheese (cheddar cheese [cultured milk, salt, enzymes], water, cream, sodium phosphate, salt, annatto color, sorbic acid), powdered cellulose (to prevent caking). Allergen: Milk

  • Hot Dogs:

    • How its made: Ground beef is mixed with seasoning, stuffed into Non-Edible 26 mm cellulose casings. Hot dogs are then smoked and brought up 160 degrees over several hours. Fully Cooked.

    • Ingredients: Sea Salt, Maltodextrin, All Dairy Blend (whey solids, nonfat dry milk, buttermilk powder), Raw Cane Sugar, Oat Fiber, Natural Hickory Smoked Salt Flavor, Paprika, Mustard Seed, Dried Onion, Natural Hickory Smoke Flavor, Coriander, Dried Garlic, Non-gmo Soy sauce powder, (fermented soy sauce, [contains soybean and wheat], maltodextrin, salt), Canola Oil, Beetroot Red (color), White Pepper, Tart Cherry Powder (cherry powder [natural flavor], organic cane sugar, silicon dioxide [anti-caking]), Paprika Oleoresin with Rosemary Extract (color), Ascorbic Acid (preservative), Silicon Dioxide (flow agent), Natural Flavors.
